Pita Pizzas

Pita Pizza

These little individual pizzas are super easy and quick to make.  Kids can help and make what they want.  Pizzas only bake for 6 - 10 minutes, prep item depends on how silly of a mood your kids are in.



You will need:

1 package of wheat PITA POCKETS
MOZZARELLA CHEESE
TOMATO SAUCE (I used some leftover, but you can use a small can)
TOPPINGS - whatever you like

For crispy pizzas -broil pitas on low for about 5 minutes before topping
For softer pizzas - place toppings, then bake

I put my pizzas under the broiler until the cheese was golden.  This took about 6 minutes.
You can bake on 400 for 8-10 minutes as well.


Get the kids involved.  They can put on as much or as little of the toppings as they like.

Chicken Alfredo Biscuits





Chicken Alfredo Biscuits

Here is another leftover meal.  Quick and easy



Ingredients:

1 can refrigerated biscuits
1cup Alfredo sauce
1 cup cooked, shredded chicken
1 cup mozzarella cheese
1/2 cup chopped broccoli
1/4 cup diced orange pepper
1/4 cup diced asparagus
salt & pepper


Directions:

Preheat oven to 375 degrees

Flatten biscuits.
Place into muffin tins, forming a cup
Spoon 1 spoonful of Alfredo into each "cup"
Fill each cup with broccoli, peppers, and asparagus and cheese.
Salt & pepper to taste.
Top with chicken and 1 more spoonful of Alfredo.
Fold edges of biscuits up over the cups.
Bake at 375 degrees for 15 minutes

Crochet Baby Boy Blanket



Double Crochet Baby Blanket


Materials:
worsted weight yarn
(A) 1 ball dark blue
(B) 1 ball light blue
(C) 1 ball grey
(D) 1 ball light green
size I crochet hook
tapestry needle


Instructions:

Pattern:
With (C) chain (ch) 80, double crochet (dc) 2 rows.
Switch to (D), double crochet 2 rows
Switch to (B), double crochet 2 rows
Switch to (A), double crochet 1 row
Switch to (B), double crochet 2 rows
Switch to (D), double crochet 2 rows
Switch to (C), double crochet 2 rows
Switch to (A), single crochet 1 row

Repeat patterns 4 more times.
When finished with final row of (A), continue in (A) around entire piece to form a border.  At corners, use the rule of three.  3 dc into corner, ch 2, dc into same stitch, continue around piece.

Once you have 1 row of (A) around entire piece, dc 2 more rows.

Tie off and weave in all loose ends.










Chicken and Stuffing Casserole




CHICKEN AND STUFFING CASSEROLE




This is healthy and super easy to make with leftovers and things you have on had.




Ingredients:
1 box chicken or pork flavor stuffing ( I used Stove Top)
1 3/4 cup hot water
1lb cooked chicken or turkey (cut into approx 1" pieces)
2 cups fresh mixed veggies, chopped (I used zucchini, yellow squash, asparagus & broccoli)
1 small onion chopped
1 14.5 oz can diced tomatoes, drained
1 cup mozzarella cheese
1/2 tsp pepper
1/2 tsp dried oregano




Directions:


Preheat oven to 375 degrees
Combine stuffing mix & hot water in medium
size bowl, stir until absorbed. Set aside.
In a 9 X 13 baking dish combine chicken, veggies,
tomatoes, cheese and spices. Stir until well mixed.
Top evenly with stuffing.
Bake at 375 degrees for 25 minutes or until
stuffing is golden brown.
Serve with a colorful salad
