Blueberry Lime Muffins

3/4 cups milk
1/4 cup vegetable oil
1 large egg
2 cups flour
1/2 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup fresh blueberries (washed and dried)
zest of 1 lime
juice of half a lime
Preheat oven to 400 degrees.  Place 12 muffins liners in muffin tin. Spray lightly with cooking spray.
In a medium bowl, beat together, milk, oil and egg until well mixed. Stir in flour, sugar, baking power and salt, just until moist. Do not over mix. Fold in blueberries, lime zest and lime juice.
Divide batter evenly between 12 muffin cups. Bake at 400 degrees for 20 - 25 minutes until golden brown. Cool on wire rack.
